解決策を見つけました。 rabbitmq stompのドキュメントでは、デフォルトの状況ではポート61613でリッスンし、それに対応してspring stompはデフォルトでlocalhost：61613に接続します。しかし私は設定で5672にポートを設定しました。どのように愚か:)。
