FFMPEGのバージョンは、OpenCVので動作するようにあまりにも最近のことです。どうやら、いくつかの関数シグネチャが変更され、それがビルドを壊しているようです。

私は過去にFFMPEG 0.5.xと0.6.xでOpenCVをコンパイルしていますので、FFMPEGをダウングレードすることをお勧めします。
