問題は、ES内のフィールドcoordinates.coordinatesに受信したタイプではないタイプのデータが必要となることです。

解決策は、テンプレートを変更して座標タイプを削除することです。次に、インデックスを削除してデータを再インデックスします。その場合、予想されるタイプのcoordinates.coordinatesは、挿入されるデータに依存します。
